Ingredients

  • 100 g Dried Apricots
  • 100 g Desiccated Coconut
  • 80 g Almonds
  • 2-3 tbsp Date Paste
  • 50 g Vegan Protein Powder (optional)

Instructions

  • Prepare Ingredients: Chop the dried apricots and almonds if not already done. Prepare fresh lemon juice and keep the date paste ready.
  • Process Almonds: In a food processor, pulse the almonds until they attain a fine, crumbly texture.
  • Combine Apricots: Add the dried apricots to the processed almonds and pulse until well combined and the mixture starts to come together.
  • Blend Ingredients: Incorporate date paste, desiccated coconut, and vegan protein powder. Blend until the mixture is well combined and starts to form a dough-like consistency.
  • Forming Balls: With slightly wet hands or using a cookie scoop, shape the mixture into small, bite-sized balls. Ensure they are compact to avoid crumbling.
  • Coating: Roll the balls in the extra desiccated coconut to coat them evenly.
  • Refrigeration: Place the bliss balls in the refrigerator until firm, preferably for an hour before enjoying them.
