Easy No Bake Vegan Chocolate Pudding with Tofu

Ingredients

  • 150 g dark chocolate (70% cocoa or higher)
  • 1 block silken tofu
  • 5-8 deglet noor dates
  • 2 tbsp peanut butter
  • shredded coconut for garnish
  • nut milk optional

Instructions

  • Chocolate Melting: Using a double boiler or microwave, gently melt the dark chocolate until smooth.
  • Blend Ingredients: In a food processor, combine the silken tofu, dates, peanut butter, and melted chocolate. Blend until you achieve a creamy texture.
  • Adjust Consistency: If your mixture feels too thick, gradually add nut milk until you reach your desired consistency.
  • Set & Chill: Pour the mixture into individual serving puds or glasses. Refrigerate for a minimum of 2 hours to set.
  • Serve & Enjoy: Before serving, garnish with a sprinkle of shredded coconut and any other preferred toppings.

Notes

Tofu Texture: Silken tofu is recommended for its creamy texture. If you use firmer tofu, the consistency of the choco puds might be less smooth.
Nut Milk: This is optional and is primarily used to adjust the consistency of the mixture. If you find the blend too thick, add nut milk a little at a time until you achieve the desired consistency.
Chilling Time: It's essential to allow the choco puds to chill for at least 2 hours. This helps them set and develop a richer flavor.
Storage: These choco puds are best consumed within 3-4 days when stored in an airtight container in the refrigerator.
