Freekeh Recipe | Healthy Risotto Fusion with Mushrooms and Peas

Ingredients

  • 1 cup Green Peas
  • 1 bunch of Mushrooms of your choice
  • 1 cup Broccolini optional
  • 1 tbsp Olive Oil

For the Freekeh

  • 1.5 cups Cracked Freekeh
  • 3 cups Water
  • 1/2 cup Vegetable stock

For Topping

  • Rocket
  • 1-2 Caramelized onions optional
  • Hummus
  • Thyme fresh or dried

Instructions

Cook the Freekeh

  • Rinse the freekeh thoroughly.
  • In a medium pot, bring water and vegetable stock to a boil.
  • Add the freekeh to the pot and simmer, covered, for 15 to 20 minutes, stirring occasionally, until water is absorbed. Drain any excess liquid.

Prepare the onions

  • Peel and thinly slice the onions using the julienne method for added flavor.
  • Heat a frying pan over medium heat with some oil. Fry the onions until translucent, around 10-15 minutes.
  • Remove onions and set aside.
  • In the same skillet, add broccolini, sautéing for 2 minutes.
  • Add mushrooms and green peas, stirring until softened.
  • Transfer the cooked freekeh to the pan with the sautéed veggies and stir to combine.
  • Taste and add salt and pepper if desired.

Serve the Dish

  • Serve the finished freekeh and top with caramelized onions.
  • Garnish with rocket or your choice of fresh herbs.
  • Serve with your favorite hummus.

Notes

Freekeh Preparation Tips: Freekeh is available in two varieties: whole grain and cracked. These varieties have different cooking times and uses.
To prepare freekeh, follow a similar method as you would for brown rice, but with occasional stirring.
Freekeh-to-Water Ratio: Start by bringing the water to a boil, and then add 2 parts water to 1 part freekeh. Cover the pot, reduce the heat, and stir occasionally until the liquid is absorbed.
Adjust the cooking time accordingly. If needed, drain any excess liquid from the cooked freekeh.
