Ingredients

  • 200 g Dark chocolate (at least 70% cocoa solids)
  • 50 g Pistachios
  • 50 g Goji berries
  • 50 g Shredded coconut
  • 1-2 tbsp Smooth peanut butter
  • 1 tbsp Plant-based Milk
  • 1 tbsp Maple syrup optional

Instructions

  • Soak Goji berries: Begin by rinsing goji berries under cold water. Place them in a bowl and cover with cold water, allowing them to soak for 10-20 minutes. Once softened, drain the water.
  • Melt the dark chocolate: Break the dark chocolate into small pieces and melt it using a double boiler or a pot. Stir until smooth and creamy.
  • Add peanut butter: Add 1-2 tbsp of peanut butter into the chocolate and add milk, if needed. Mix well.
  • Prepare the toppings: Chop the pistachios into small pieces. Set aside.
  • Assemble the bars: Line a baking dish with parchment paper. Pour the melted chocolate into the dish and spread it evenly. Sprinkle the chopped pistachios, goji berries and shredded coconut.
  • Refrigerate and set: Place the baking dish in the refrigerator and let the chocolate bars set for at least 1 hour or until firm.
  • Slice and enjoy: Once the bars are fully set, remove them from the refrigerator and slice them into individual bars. Serve and enjoy!
